How to make Homemade Mozzarella Cheese at Home


Many types of cheese are available in India. Mozzarella cheese is among the most commonly consumed here. It is used in many recipes, including sandwiches, pizzas, pasta, etc. You can make this creamy and tasty cheese at home. Here is all you need to know about how to make healthy mozzarella cheese at home:

Ingredients required:

  • 1 ½ teaspoon of citric acid
  • ¾ cup of water 
  • 4.5l raw milk or pasteurized milk
  • 1 teaspoon of salt 
  • 1/4 teaspoon of liquid rennet

Step-by-step process:

  • Take a bowl and add only 1/4 cup of water and rennet. Make sure they are mixed well.
  • The rest of the water should be mixed with citric acid in a separate bowl. It should also be mixed well. 
  • Take a large pot, put it on the stove, and pour the milk into it. Set the flame to medium and add the citric acid mixture to the milk. Continue heating the milk until it reaches 90 degrees F while stirring it occasionally. 
  • Heat the milk at 90 degrees F for 5 minutes and then remove the pot from the flame. Put the rennet mixture into the heated milk and keep stirring for 1 minute. Stir in a motion like a number 8 for the first 30 seconds and then go counterclockwise for 30 seconds to still the milk. Cover the pot and allow the milk to set for 5 to 10 minutes until it turns curd. You must check the firmness with a spoon by pressing the edge of the curd. 
  • If the curd is firm, make 3 to 4-inch slices with a knife. Now, stir the curds gently, making sure that the cubes do not break.
  • Put the pot on the flame once again and set it to medium. You must heat the curds to 109 degrees F and wait 5 minutes before taking the pot off the flame. 
  • Use a slotted spoon to transfer the curds onto a colander set over a bowl. You must extract the liquid whey from the curds by pressing them gently. The whey collected in the bowl after pressing the curd should be poured into the pot.
  • Put the pot on the flame and heat the whey to 185 degrees F. Now, use your hands to tear off a curd piece and place it on a slotted spoon. Put it in the heated whey, hold it for a few seconds, and knead the curd properly. Repeat this process until you feel that the mozzarella is smooth and elastic. You can add salt to the mozzarella cheese and slowly fold it into a ball. The rest of the curd will be turned into mozzarella using the same process.
  • Once your homemade mozzarella cheese cools down, wrap it in plastic and store it in the refrigerator.
